So my little family is trying to eat healthier and we picked a few recipes out of past issues of Food Network Magazine. Dinner tonight was Cajun Stuffed Peppers.. it wasn't bad. Quinoa, kale, .. I wasn't sure how well it would taste. We ended up swapping the sausage for shredded chicken, and brown rice for white (because we forgot to buy brown). It was a bit bland, but with some hot sauce it was tolerable. :) I would say it's a meal we'll try again, and next time maybe with a spicy sausage and that brown rice we forgot to buy. :)
Oh! And dear sweet hubby made me these delicious Oatmeal Flax cookies.. recipe also from the magazine.
